Hallmark acidity, freshness and mineral qualities make Chabis excellent palate cleansers, and extremely food-friendly wines. Once they integrate, Chablis can become velvety, but they don't lose the freshness that makes them so alluring.

 

Jean Dauvissat is the cousin of Rene Dauvissat whose wines have an almost cult-like status. Burgundy lovers enjoy these wines because they perform as well as many higher-priced Burgundies at a fraction of the price, so what's not to like about these bargains of white Burgundy.

The 2017 Chablis Les Sechets 1er Cru is gorgeous. Apricot, hazelnut, crushed flowers and herbs give the Sechets a savory character that is beguiling and undeniably attractive. Light on its feet, perfumed and nuanced, the 2017 offers lovely precision in an understated style that speaks to finesse more than anything else. Tasting note: I very much like the freshness of the citrus and green apple-scented nose that displays background notes of matchstick character, algae and oyster shell. The mouth feel of the medium-bodied flavors is at once caressing yet reasonably precise with good punch and minerality that carries over to the clean, bone dry and lemon-inflected finish. This is a wine that should reward mid-term cellaring. Allen Meadows, Burghound

The 2017 Chablis Vaillons Vieilles Vignes 1er Cru is pretty, gracious and lifted, with a real sense of vertical expansiveness. In this vintage, the Vieilles Vignes is wonderfully lifted in feel. Sweet floral notes, apricot and tropical fruits meld together in a layered, exquisite Chablis that has much to offer.-- Antonio Galloni, Vinous Media

 

Note: from 70+ year old vines in Châtains with 15% new wood
Tasting note: Aromatically this is similar to the regular cuvée with two exceptions, which are that the mildly exotic aromas are riper and are trimmed in enough wood to merit mentioning. As is always the case there is notably better density to the medium weight plus flavors that coat the palate with dry extract on the sappy, notably dry and sneaky long saline-inflected finale. Tasted from tank just prior to bottling, the 2017 Chablis Vaillons 1er Cru shows why this vintage is so compelling. Apricot, peach and tropical fruit give the 2017 a decidedly exotic flair, and yet bright acids keep the wine lively and energetic. Tasting note: There is evident Chablis typicity to the expressive and softly exotic nose that reflects notes of mineral reduction, white flower and tidal pool nuances. The sleek and mineral-driven flavors possess a relatively fine mouth feel, all wrapped in a markedly dry finish that is notably saline in character. Tasting note: The wood is a bit more obvious though not intrusive on the green fruit, white flower and iodine-scented aromas. The exceptionally rich full-bodied flavors also possess fine density thanks to the abundant level of dry extract that buffers the moderately firm acid spine on the very dry finale. The 2017 Chablis Les Preuses Grand Cru is a dense, powerful wine. Time in the glass brings out a good deal of Preuses mineral and floral character. As always, the Preuses spends a year in oak and a year in tank. The first year imparts a level of power and richness that, in my view, masks some of the subtleties of Preuses . There is plenty of depth and nuance here, but I feel there could maybe have been even more. -Antonio Galloni, Vinous Media

The 2016 Chablis Grand Cru les Preuses was sleeping when I tasted it from barrel, in the sense that you could tell it is laden with attractive, quite honeyed aromas that they will only be released once given appropriate bottle age. The palate is smooth and slightly honeyed in texture, understated on the entry and it is easy to almost miss the intensity that only hits home once the wine has departed, like a latent reaction. It is a deeply complex les Preuses that will need a decade in bottle to show what it is really made of. But you already know that you are in the presence of something special. The 2016 Chablis Grand Cru les Clos has a correct, strict and intense bouquet with white citrus fruit, apple blossom, flint and just a faint touch of blackcurrant. After aeration it loosens its tie and starts to evolve smoke and hazelnut aromas. The palate is very mineral driven with beguiling tension that demands the full attention of your senses. It comes across quite spicy in the mouth with touches of ginger, curry leaf and Chinese five spice. Texturally, it becomes slightly more honeyed towards the finish—a wonderful crescendo—and the aftertaste lingers for more than a minute. To put in the most banal of terms...wow.
