You might have cleaned out some of your cellar for New Year’s Eve, so it is time to start looking to restock, and Champagne is in high demand! It was a record-setting year for Champagne sales, and as such it is getting much more challenging to source the great bottles that are coveted by so many. We were happy to finally receive some new offerings from Vilmart & Cie, Deutz and Pierre Peters, just arriving over the last few days.

2016 Vilmart & Cie Grand Cellier d'Or Brut

Gorgeous aromas and flavors of nectarine, chopped almond, dried white cherry, ground cardamom and ginger, lime blossoms, graphite and espresso crema are immediately present on the mouthwatering palate of this elegant Champagne. Buoyed by bright, well-integrated acidity, the flavors glide along on the fine, creamy mousse, underscored by a racy streak of salinity that drives the clean-cut finish. The 2016 Brut Grand Cellier d' Or is a gorgeous, ethereal Champagne that is all about grace. Floral and citrus notes abound in a weightless, translucent Champagne that has so much to offer. A mouthwatering rosé, with grace and vitality, this is beautifully textured as well, like a swathe of cashmere on the palate. A streak of minerally chalk and smoke underscores an enticing range of ripe melon, pink grapefruit sorbet, candied ginger and wild strawberry flavors that echo on the juicy finish. Disgorged with five grams per liter dosage, the 2015 Brut Blanc de Blancs Cuvée Spéciale Les Chétillons has turned out well, unwinding in the glass with aromas of freshly baked bread, crisp orchard fruit, clear honey, warm biscuits and dried white flowers. Medium to full-bodied, fleshy and muscular, it's a deep, compact wine structured around racy acids and chalky extract. It's a strong effort, but it will demand a bit of patience to reveal all its potential. Peters was careful not to pick too soon, classifying 2015 along with 2011 and 2007 as years defined by an early harvest where it was nonetheless critical to avoid picking too early. - William Kelley, Wine Advocate
