Raisin notes with touches of grainy nu¡ness spread wide on the palate, then progress smoothly into the finish. A major trademark of this Yuho sake is that there is lots of umami without being cloying. A great sake to try warmed as well as slightly chilled.
Pair with miso-glazed scallops on squid ink spaghe¡, soba with swiss chard miso pesto, or roast pork tenderloin with cilantro date relish.
Mioya Shuzo was established in 1897, and is one of few sake breweries with a female president, Miho Fujita. Mioya is located in Ishikawa Ò well known for hot springs, pris¡ne seafood, and most of all, sake. Toji Toshio Yokomichi places great importance on his rela¡onship with the farmers who grow his sake rice to make sure it is grown properly and that agricultural chemicals are avoided in the process. The name Yuho has a double meaning; Yuho means Happy Rice, but also refers to their citys supposed numerous UFO spo¡ngs.
