The Savès family has been rooted in the heart of Bouzy since 1894, with a legacy detailed in existing registers. Over the years, the family has upheld their reputation, with Hervé, his wife Nathalie, and their son Arthur currently tending to around ten hectares of vineyards. The terroirs all boast Grand Cru or Premier Cru status, including Bouzy, Ambonnay, Tours-sur-Marne, and Tauxières.

 

The rose is comprised of 60% Grand Cru Bouzy Chardonnay, 28% Grand Cru Bouzy Pinot Noir and 12% Bouzy Rouge. This is blended over two years and "strikes the palate with great delicacy and has a fruitier finish showing its noble origins."

Note: 60% chardonnay, 40% pinot noir, disgorged May 2019, 3 years on lees, dosage 8 g/L Tasting note: Oeil de perdrix color. Softly yeasty and decidedly cool and elegant aromas include those of freshly sliced citrus, especially lime, raspberry and a whisper of strawberry. There is excellent intensity to the finely detailed flavors that are supported by an equally fine mousse, all wrapped in a crisp, even snappy, finish that also drinks much drier than the stated dosage level would suggest; indeed, this is borderline austere, which isn't something that happens all that often with rosé sparklers. - Burghound

 

(60% chardonnay and 40% pinot noir): Bright orange-pink. Smoky, mineral-accented red berries and blood orange on the expressive nose, accented by Asian spices and white flowers. Fleshy and broad on entry, then tighter in the mid-palate, offering intense raspberry, bitter cherry and orange pith flavors and notes of smoky lees and anise. The NV Brut Grand Cru Carte d'Or is a fat, ripe wine bursting with the warmth and generosity of Bouzy. Medium to full in body, the Brut Grand Cru Carte d'Or impresses for its expansive texture and sheer character. The Brut Grand Cru Carte d'Or is 75% Pinot Noir and 25% Chardonnay, vintages 2005 (60%) and 2004 (40%) from southeast facing vineyards in Bouzy with an average age of 25 years. A distinctly yeasty and bright nose reveals moderate maturity in the form of poached pear and apple. The Brut Premier Cru Carte Blanche is a beautiful introduction to the Champagnes of Camille Saves. The aromas and flavors are totally alive in the glass, with chiseled, saline notes that provide backbone and vibrancy. This gorgeous, delicious Champagne shows why Bouzy is so highly regarded. Pears, white flowers and slate flow through to the chiseled finish. The blend of 75% Pinot Noir and 25% Chardonnay works beautifully. There is a marked citrus component present on the expressive, cool and elegant nose that speaks mostly of white flowers, pear and green apple scents. There is good punch to the clean and crisp middle weight flavors that retain a good sense of delineation thanks to the relatively fine effervescence before terminating in moderately dry but not really austere finish. I very much like the style though this lacks just a bit of overall complexity for it to be at the next level. Note that this is very pleasant now though it could easily be held for a few years first if desired in the hopes that more depth will develop. - Allen Meadows, Burghound
