Lime tint to the colour. One third has been made in barrel, which does not show. A light spice, a real depth of fruit, starting to bring out a depth of ripe yellow fruit with an excellent spicy touch, intense, opulent, balanced and persistent. Tasted: June 2021, --Jasper Morris, Inside Burgundy
Tasting note: Here the wood treatment is slightly more evident though it still remains a background element on the nose of essence of pear, iodine and pretty citrus wisps. There is first-rate density to the powerful yet refined, even sophisticated, middleweight plus flavors that brim with both dry extract and minerality on the compact, bone-dry and sneaky long finish. The 2020 Chablis les Preuses sees 18 months in stainless steel and barrel. It has a clean, precise almost clinical bouquet with subtle granitic scents emerging with time. Vibrant and energetic. The palate is well-balanced with a fine bead of acidity very harmonious with hints of white peach, Nashi pear, and a liberal sprinkling of white pepper. Excellent. Made partly in tank, and partly in barrel with a touch of new wood. Lovely light lime touch to the colour, opulent but not exotic bouquet. There is a really impressive length of flavour here, indeed waves of flavour which really kick on. An optimum yield of 50 hl/ha helps explain the excellent balance. Really good. Tasting note: This also displays a plenitude of classic Chablis character with its combination of various shellfish, mineral reduction and algae with overtly floral white fleshed fruit aromas. Here too there is excellent concentration to the unusually powerful larger-scaled flavors that also possess fine balance on the wonderfully persistent, clean and quite dry but not really austere finale. The 2020 Chablis Vaulorent 1er Cru has an arresting gun-flint scented bouquet that has real focus and delineation. Wonderful. The palate is well-balanced with a sharp line of acidity. Good weight and a bit ‘mean’ perhaps, yet there is ample freshness and lip-smacking sapidity on the finish. It does not have the wide appeal of other Chablis...and it doesn't care. Superb. Tasting note: There is a whiff of phenolic character to the overtly floral-suffused nose of lemongrass, green apple and petrol, all of which is trimmed in equally subtle wood treatment. The cool, refined and beautifully textured medium-bodied flavors exhibit ample minerality on the youthfully austere and even longer built-to-age finale. Tasting note: An exceptionally subtle touch of wood can be found on the classic Chablis nose of oyster shell, seashore and iodine along with citrus confit nuances. The concentrated and powerful yet quite sleek medium-weight flavors possess a more sophisticated texture while coating the palate on the saline-suffused finale. Pale lemon colour, a little whiff of coconut, but the wine is not too exotic. Some wood here. Lovely depth to the fruit here, a little bitterness at the finish which works quite well alongside the suavity and depth of fruit. Tasted: June 2021-Jasper Morris, Inside Burgundy
