Opening to a luminous garnet color, the Paitin 2019 Barbaresco Serraboella Sorì Paitin is delicate and fresh, but the wine is not without its inner power and consistency. It plays its cards carefully, thanks to a slow-moving bouquet characterized by redcurrant and tart cherry. It gains power on the palate with polished tannins and tight structure. Paitin is a very traditional estate where the winemaking is focused on submerged-cap maceration of one month and ageing in big Slavonian as well as Austrian oak casks. Bright ruby in the glass, it's slightly funky at first but then focuses on floral touches, super-restrained, with a tight pomegranate character. The attack is crunchy with ripe tannins woven with zesty acidity and a cherry kernel flavour. The remarkable fruit freshness makes this wine stylish and not without ability to age.
