(partly from vines in Les Pargues and Chapelot that Billaud retained after the sale of Billaud-Simon): Pale yellow-green. Aromas of lemon and lime zest, white pepper and crushed rock. Quite dry and backward on the palate, with a distinctly metallic, austere quality to its crushed-rock minerality. A touch of musky reduction blew off to reveal sappy grapefruit and flint on the finish. This classic village Chablis delivers density without weight. Stephen Tanzer – Vinous Media
The 2014 Chablis Villages from Domaine Billaud-Simon has a more floral bouquet than its peers with peppermint scents subtlety interwoven into the citrus and green apple aromas. The palate is very well balanced with a keen line of acidity. This just feels natural and harmonious, the finish just flowing across the mouth with requisite tension and mineralité for a Chablis.
