Spontaneous fermentation in old barrels; 50% Chardonnay from Chouilly, Avize and Oiry and 50% Pinot Noir, mostly from Aÿ. Plenty of precision and focus for 2015, although the ripeness of the year is felt in the concentration of toasty citrus, blue fruits and some baked greengage, richened with honey on toast, cream and gentle spice. Bold, saturated but still offering refreshment.- TH, Decanter
50% Chardonnay (Oiry, Chouilly, Avize) and 50% Pinot Noir (Aÿ, Grande Vallée de la Marne). The main part of the cuvée is vinified and aged in oak barrels, spontaneous fermentation, no filtration. No malo. Sur lattes for 72 months.
Very golden. Waxy and tropical and frangipani, but with a forceful swag of rich, sour cream. This is very good. Concentrated, rich, distinctive and dramatic. Minty flair on the finish. Tarragon. And an earthiness. Lots here. A big change from the other Hébrart wines. - TC, JancisRobinson
