The 2017 Éphémère 017 is 100% Pinot Noir from Bouzy and Ambonnay based on 2017 with some reserve wines. Soft and caressing, the 2017 offers lovely depth to match its understated personality. The style is one that very much emphasizes freshness. I would like to see more Pinot character and more Bouzy/Ambonnay breath, the qualities those villages are known for. Dosage 2 grams per liter. Fred Savart and 5 longtime friends noticed in 2014 that there were prime vineyards in Champagne that were not being adequately appreciated. The team includes: Fred Savart, Philippe & Manu and Champagne Drémont with holdings mainly in the Côte des Blancs (Avize, Oger & Mesnil).
