Alain Chavy has quietly been producing some very fine white Burgundy in recent years from his winery located behind his house on the outskirts of Puligny village. “July was dry and warm,” he explained just prior to tasting his 2015s. “There was 10mm of rain throughout the summer each week and that prevented hydric stress. So the maturity was never blocked. We started the harvest on 28 August. We found that the wines had more richness than 2015 and I had to correct the acidity a little in the winery, except for the Puligny-Montrachet les Folatières, which naturally has very good acidity. The premier crus were all matured in around 30% new wood and because the lees were high in quality, I practiced just a very gentle débourbage [settling]. I think the 2015s will be good for drinking earlier but they will last long term.” The Wine Advocate
