Ayala's non-dosage fizz is a classic Champagne blend with Chardonnay, Pinot Noir and Meunier. Nice complexity on the nose, with citrus and stone fruit, fresh pastry notes and a stony mineral undertow. Very fine bubbles on the silky palate; super-crisp with assertive acidity and a mineral-citrus character, plus subtle notes of peach and pear fruit.
