The 2007 Hermitage Pavillon is drinking brilliantly today. Classic cassis, bacon fat, and graphite, as well as a beautiful minerality, all emerge from this concentrated Hermitage that has silky tannins, full body, awesome purity of fruit, and a great, great finish. While it doesn’t have the sheer density of the 2005, 2009, or 2010, it’s perfectly balanced and is simply a thrilling Hermitage to enjoy over the coming 15 years or more. Jeb Dunnuck (12/13/18)
