The Spirale is a classic example of a vin de paille. Harvested grapes are placed on straw mats for over five months, the grapes begin to dry and sugars become more concentrated. Because of the unusually high degree of sugar present, the wine reaches its equilibrium and stops fermenting around 8% alcohol. This wine has flavors of golden peach nectar with hints of fresh hay and passion fruit.
