Coming from the oldest vines, some of them centuries old, of the Tempranillo variety, a manual selection of the best clusters is carried out and a cryo-maceration is carried out, that is, cold maceration, even freezing part of the berries to break the cells and obtain a greater concentration. This process takes approximately 5-7 days. The subsequent fermentation and maceration is carried out in small tanks and in an artisanal way, sinking the cap manually and watering it patiently with a pump that respects the structure of the grapes. Maceration can last 24 more days. It is devatted into new French oak barrels to carry out malolactic fermentation in the barrel. Once this is finished, it is racked and put back into new extra-fine grain French oak barrels, remaining in these for more than 24 months, performing several rackings and thus eliminating the impurities of the wine and the wood over time. In this way we avoid the clarification and stabilization of the wine, preserving all the purity of the product. Because it is a traditional production, it can lead to small natural precipitates of the wine forming in the bottle. In appearance we find a wine with a very high layer of color that perfectly preserves purple tones, with great glyceric intensity. The aroma of this wine stands out for its enormous complexity, it retains ripe fruit and floral tones assembled with a great variety of spices, toasted nuts and coffee tones. Clean wood that respects the wine and enhances its harmony. It is an explosion of very concentrated aromas. In the mouth we find its great uniqueness, sweet tannin in abundance, density and great persistence. An example of concentration and elegance in a wine with unmatched persistence leaving a harmonious finish in the mouth.
