The 2015 Extra Brut Noces de Craie is fabulous. Rich, powerful and explosive, the 2015 exudes Pinot intensity, with layers of chalky, saline notes that run through a deep core of fruit. This is a decidedly virile style. The 2015 finishes with tremendous vinosity and all of the textural resonance that is typical of Champagnes from Aÿ. Dosage is 5 grams per liter. Disgorged in April 2019, Hébrart's 2015 Extra-Brut Blanc de Noirs Grand Cru Noces de Craie is lovely, bursting with aromas of peach, pear, clear honey, white flowers and fresh pastry. Medium to full-bodied, it is fleshy and vibrant, with a pillowy mousse, racy acids and a charming core of fruit. This has turned out very nicely indeed. - William Kelley, Wine Advocate
Crème de cassis and marzipan notes are ripe and rich in this plush Champagne, enlivened by juicy acidity as well as zesty grated ginger, plum skin and tangy fleur de sel accents. This is pure pinot noir from several parcels in Aÿ, all vinified in stainless steel. It’s vivid and assertive, showing the ripeness and power of the vintage, yet it also feels velvety in texture and elegantly refined, demonstrating all of the grandeur and sophistication of the Aÿ terroir. Its finish is long and densely fragrant, marked by a slight bitterness but managed well, and it promises to gain even more complexity and expression with further aging. It has a huge adamant length you did not expect—all the power is in the back, it only seems to yield. Tthe Noces de Craie, a pure pinot noir champagne sourced from Hébrart’s finest parcels in Aÿ, including Cheuzette, Longschamps, Pruche, Chauffour and Pierre Robert.
