As the Moutard family has mainly roots from Champagne, it also has some from Burgundy. It was natural to enhance these double cultures in creating a specific range of Champagne, called “Climat de Champagne.” “Climat de Champagne” are from single grape with no dosage, and from a single plot.
Varietal Composition: 100% Chardonnay
Elaboration: Champagne Moutard Climat Vignes Chiennes is vinified in big barrel (Foudre) from Burgundy Oak for at least 9 months. It is bottled with cork and staple during the second fermentation. The bottles are kept 4 years on lees in our cellars on horizontal position.
This specific vinification method allows us to express our terroir and specificity of each plot. Due to their different exposition, nature of soil, geology, they give to Champagne different tastes and aromas according to the plot.
