"Monsieur Piva and his daughter, Sandrine, make this lovely sparkling wine out our their Certified Organic Semillon and Sauvignon Blanc estate grown grapes. It is made in the highest quality possible, methode Champenoise, and they would have it no other way. A very slow and gentle press of their grapes ensures delicate aromatics and a fantastic complexity on the palate. A very long bottle ageing takes the superior raw materials of this wine even higher. This is not your average cremant, its a vintage! 2011 to be exact. Not even most Champagnes are a vintage. This is priced at an every day drinker bottle. However, it drinks well above this.
